Drawing on the influences of traditional Welsh ingredients and fusing them with the influences of our chefs here in the kitchen, we were able to present a dish that celebrates the brilliance of integrating communities in Wales; as part of our St Fagans Supper Club.Barra Brith is an instantly recognisable bread in Wales, it's spicey bejewelled yuminess is perfect with lashings of butter and a good cuppa. However, our resident Hondurian chef - Alis - saw this humble baked good as the perfect ingredient for Torrejas: a cinnamon syrup-soaked french toast traditionally made with baguettes. The result of this masterclass of creative thinking creates a dish that is bursting with sumptuous dry fruit flavour and warming spice. But, regardless of the repurposing, this dish still goes well with a good cup of tea!
