To celebrate our food box collaboration with St Fagans museum, we are sharing with you a truly unique recipe this month. Drawing on the influences of traditional Welsh ingredients and fusing them with the influences of our chefs here in the kitchen, we were able to present a dish that celebrates the brilliance of integrating communities in Wales; as part of our St Fagans Supper Club.

Barra Brith is an instantly recognisable bread in Wales, it's spicey bejewelled yuminess is perfect with lashings of butter and a good cuppa. However, our resident Hondurian chef - Alis - saw this humble baked good as the perfect ingredient for Torrejas: a cinnamon syrup-soaked french toast traditionally made with baguettes. The result of this masterclass of creative thinking creates a dish that is bursting with sumptuous dry fruit flavour and warming spice. But, regardless of the repurposing, this dish still goes well with a good cup of tea!
