The first Home Supper Club of 2021 takes us to the East African country of Ethiopia. 🇪🇹
Ethiopian food culture centres around the ritual of breaking 'injera' - a traditional sourdough flatbread - and sharing food from a communal plate, signifying the bonds of loyalty and friendship.
The traditional way of eating is with your fingers, using the injera as both a plate and a utensil.🍴
Injera is placed on a platter with a variety of dishes - stews, soups, and salads - decoratively arranged around it; a small piece of injera is then torn off and wrapped around a mouthful of the selected dish.
Ethiopian cultural dishes are prepared with a distinctive variety of unique spices for an unforgettably striking dimension to exotic cookery.
Tibs is an Ethiopian dish that veers off slightly from the traditional 'Wat' stew. 
Usually made from beef or lamb, this quick stir fry dish combines prime cut meat and fresh vegetables, with the obligatory Berbere spices, to create a dish packed full of flavour.
For our plant-based friends, we have substituted beef for earthy, umami-packed, portobello mushrooms.
Of course, an Ethiopian platter wouldn’t be complete without soups and stew, how else could you use your Injera if there are no juices to mop up?
Mesir Wat is a thick, red lentil stew cooked with heaps of onions, tomatoes and berbere - rich and spicy
